The Barolo “Vigneto Cerretta” by Ettore Germano is the base wine for the Vermouth Superiore Del Professore. Thanks to our meticulous and respectful craft processes, the wine’s structure, subtlety of aromas and elegant tannins are enriched by the complexity of botanicals.

A second phase of maturing in barrel creates the necessary “marriage” between our botanicals and this noble red wine from the Piedmont region and gives birth, after many years of judicious ageing and craft work, to a remarkably well-balanced Vermouth.

THE GIBSON PICKLED VERMOUTH

Del Professore Pickled Vermouth, born in collaboration with Marian Beke of The Gibson bar in London, is a unique product, out of the box and therefore surprising. Aromatic and fruity wines blend with unusual spices and aromatic herbs, giving life to an original demi-sec Vermouth which combines the centuries-old Piedmontese craftsmanship with the millenary culture of the "pickles" and above all with the creativity and inspiration of one of the most fanciful bartenders on the world scene.

The Gibson Pickled Vermouth is fresh and fruity on the nose, with light notes of dill and laurel leaf, then explodes on the palate with hints of coriander, absinthe, Jamaican allspice, cubeb, clary sage and red thyme which give a unique, full flavor, with a refreshing citrus finish, enriched with a persistent grapefruit note.

OUR PICKLED MARTINI

5 cl London Dry Gin, 4 cl Pickled vermouth, 2 dashes orange bitter, 2 dashes Angostura.

Stir and strain in a Coupette glass. Garnish with lemon zest.

The Whisky Finish Vermouth is the result of an unusual marriage of the Vermouth Classico Del Professore with the famous Scottish spirit. We age our vermouth for a few months in high-quality whisky barrels, where it takes on all the unmistakable aromas of the whisky.

This Vermouth has an intense amber hue and releases enveloping peaty aromas in an elegant symbiosis with its vinosity and aromatic complexity. Ultra-soft and velvety on the palate, with full-bodied flavour and warm long-lingering aromas, laced with distinct smoky notes.

This is a unique and captivating limited edition. Vermouth Classico Del Professore is left to age for several months in barrels previously used to store fine Jamaican rum. The typical aromas of this Caribbean spirit melt into those of the vermouth creating a bond which majestically demonstrates all the potential of blending.

A singular union of complementary notes which bring out the best of each other, resulting in a pleasant and complex drinking experience from the very first sip.

The intense amber color introduces intense and enveloping aromas, in elegant symbiosis with the aromatic complexity of our Vermouth Classico. Intense smoky and balsamic on the nose, on the palate it offers a variegated bouquet of ripe fruit, in alcohol apricots and cherries, raisins, honey and toasted wood in a singular balance between aromatic components, acidity and sugars.
